Taco Tuesday Baby- Taco Pizza Edition- 252 of 365

 

1lb ground beef
taco seasoning
refried beans
cheese
prepared pizza dough
onions
cilantro
avocado
tomatoes
lettuce
Taco Sauce
sour cream

Brown the ground beef  and combine with taco seasoning as directed.  I add onions and cilantro into the mix.  Cover the pizza crust with a small amount of taco sauce and refried beans.  Add the beef and place in the oven for 10 minutes on 450 degrees.  When done add a layer of cheese until melted.  Cut up all pizza like and let everyone add the toppings as they like.

2 Tbsp. butter or margarine, divided
4 small boneless skinless chicken breast halves (1 lb.)
1 pkg. (8 oz.) mushrooms, sliced
1 red pepper, sliced
1 green pepper, sliced
1 small onion, sliced, separated into rings
3/4 cup Fat Free Sour Cream
2 Tbsp. Barbecue Sauce
1 tsp. chopped fresh parsley

Melt 1 Tbsp. of the butter in large skillet on medium-high heat. Add chicken; cook 5 to 7 min. on each side or until cooked through. Remove chicken from skillet to serving platter, reserving drippings in skillet; cover chicken to keep warm. Add remaining 1 Tbsp. butter, the mushrooms and onions to skillet; cook and stir 5 min. or until onions are crisp-tender. Reduce heat to low. Stir in sour cream and barbecue sauce until well blended; cook 2 min. or until heated through, stirring occasionally. Spoon over the chicken; sprinkle with parsley. Slather over some rice and you’re all set.
