Chicken Parmesan Bundles

4 oz Philadelphia Cream cheese- softened

small handful of fresh spinach

1/4 cup of grated mozzarella cheese

6 tbsp of grated parmesan cheese

6 boneless, skinless chicken breasts

1 egg

10 Ritz Crackers

1 1/2 cups of Spaghetti sauce (I make my own, but any store bought brand will do)

HEAT oven to 375ºF.

MIX cream cheese, spinach, 1 cup mozzarella and 3 Tbsp. Parmesan until well blended; spread onto chicken breasts. Starting at one short end of each breast, roll up chicken tightly. Secure with wooden toothpicks, if desired.

BEAT egg in shallow dish. Mix remaining Parmesan and cracker crumbs in separate shallow dish. Dip chicken in egg, then roll in crumb mixture. Place, seam-sides down, in 13×9-inch baking dish sprayed with cooking spray.

BAKE 30 min. or until chicken is done (165ºF). Remove and discard toothpicks, if using. Serve topped with spaghetti sauce and remaining mozzarella.

Really easy and so good.  We had a salad with tons of veggies as a side dish to keep the calories low and add some variety (lettuce, tomato, broccoli, carrots, cucumber, spinach, cauliflower, red and green pepper, parmesan cheese.)  The kids ate it all, plates clean as can be.
